The Georgians know just how-to bring style into food. Food has been an integral part of people’s lives since the by gone days. I will be sharing an old 18th century Georgian recipe that will have the young and old asking for more and what’s the best part, its both quick and easy to make.

Mrs Raffald’s Chocolate Puffs

Recipe:

Ingredients:

  • 1 egg white
  • 140 gms / 5 ounces castor sugar
  • Grated chocolate

Method:

  • Whisk the egg white till it forms stiff peaks.
  • Slowly add the castor sugar (while beating)
  • Fold in the grated chocolate
  • Place in a baking tray about 1 teaspoon each well-spaced
  • Put in at 100 degrees Celsius oven for an hour

Makes about 20 pcs and lasts a week if kept in an airtight container.
